Fresh Corn Salsa

You will love this on chicken. It is time consuming to cut everything.

Ingredients

Grill corn: lightly bush the corn ears with olive oil and grill on hight (450 degrees). Grill all sides of the corn will the desired charing is reached. Cook 2-3 minutes each side. When done allow to cool and cut the corn off the cob and put into a large bowl.

Dice: bell pepper, tomatoes, cucumber, red onion, jalapenos, garlic and cilantro. Put all diced items into the bowl with the corn.

Add Garlic salt, pepper, onion powder

In a bowl add vinegar and lime juice. Mix together and pour over all ingredients and mix. Caution mix the lime and vinegar small portions at a time and add to how you like it.

Serve over gilled chicken and white rice (will send the chicken recipe next). Slice an avocado and add to your dinner. I would not add the avocado to the Corn Salsa because it will not keep well with the salsa.

- It's worth the time, make extra it's good as a meal prep item to take to work or to take to the lab :)
